Preface: This 12 oz. bottle of Flying Dog Guard Dog was purchased for $2.50(USD) at Peas & Pickles Grocery in Brooklyn Heights, Brooklyn, NY. There is no “Best by…” notation… unless this number (found under the Universal Bar Code) 117FX10 is that code.

The following notes are made after a mouth wash with room temperature sparkling water. These notes have not been influenced by reading promotional material or any other review of this brew.

I am including this preface to inform the reader of any and all circumstances that might be conceived of as creating a biased review or a conflict of interest regarding the choice of words used in the following review. I could go on and on with semi-legal jargon but I guess you will just have to trust me eh?

The following are my tasting notes:

Appearance: This is a slightly cloudy honey colored brew with a vigorous carbonation that knits a thick, dense head of white tiny and small bubbles. The Belgian lace is noticeable but slide down the glass fairly quickly.

Aroma: The first impression is quite a nose-full for the uninitiated to Belgian style brews. For “those in the know” it is an alert to look for specific aromatics with the second visit… which reveals the musty, dusty, funky aromas that make Belgian style beers particular. The last nose-dive tells the drinker that these are not truly wild yeasts but close enough to make the anticipation of the first sip a semi-important event.

Mouth feel: A frothy, creamy body.

Flavor: The first impression is of creamy citric slightly spicy flavors that are hard to identify specifically. The second impression smoothes out any initially felt sharp edges with a padding of malt that becomes identifiable in the clatter of other flavors. The third sip has the flavors recede and then build again and finally head for the door.

Finish: On the way out the flavors of this brew still can’t be deconstructed so it’s best just to enjoy their easy-going slightly dry finish.

Comments: This brew may look mean but it is really a rather friendly little fellow. Lacking the rough edges of the tradition rustic character it takes on the more modern aspects of modern farming… John Deere rather than the old mule and iron blade plow.

Food & Beer: Light up the grill or broiler and get your hands on some flaky fish fillets and toss a green salad and enjoy this brew as a complement to the sea-salt sweet of the fish and the tang of the garden greens.
